Maftoul is a real labour of love, and if you ask any Palestinian they will be able to remember their grandmothers making this at home. We work with a women’s cooperative near Hebron who make it just like their grandmother’s would have done many years ago. They use bulgur wheat and flour and water to work together small balls through ever smaller sieves until the maftoul is complete and ready to be steamed and then dried.
