Description
Did you know that freekeh was a traditional Palestinian grain before the introduction of rice in the Ottoman era? Like olive oil grits are very seasonal and only available for purchase once a year for two weeks in the spring. Freekeh is the small green wheat. Wheat is cut and left to dry for a day in the field, then shaped into piles. These piles are ignited with fire while farmers convert them with pitchfork resulting in a unique smoky flavor and are then peeled and left to dry for two weeks before being packed and sent to our customers.
